Break the file into separate files with the same number of pages in each. Set pages per file to 1 to get one PDF per page, which is the fastest way to turn a document into single pages.

Say how many files you want instead of how many pages each holds. When the pages do not divide evenly, the extra pages go to the earlier files, so you never end up with a stray one page file at the end.

Best for: Sections of different lengths, like chapters
Type where each file starts and ends and each group becomes its own PDF. Pages you leave out are skipped, so you can drop a cover sheet or an index. Groups can overlap if you need the same page in more than one file.
Type 1-3, 4-8, 9-12 to get three files
Best for: Double sided scans that came out interleaved
Get two files: one with pages 1, 3, 5 and so on, and one with pages 2, 4, 6 and so on. When a double sided document is scanned in two passes, the fronts and backs end up mixed together, and separating them lets you put the file back in order.
